Offensive subjects (elaborate): I am so hard to offend, unless you are attacking me directly as a person or someone I care about? Probably not going to be offended at all.

Hugging this character: Sure, he could probably use a hug. His reactions will vary.
Kissing this character: Yep! His reactions will, again, vary depending on what he thinks of you and other factors that come into play.
Flirting with this character: Definitely! He may even flirt back, depending on his mental state and if he likes you.
Fighting with this character: Yup! ...Just be wary, he becomes more aggressive and confrontational depending on how stressed he is.
Injuring this character: Sure, he's human and prone to them! If it's too serious, let's talk about it first. I'll go along with anything but I like to know before hand.
Killing this character: Talk to me before hand, if we planned it out I have no problem.
Using telepathy/mind reading abilities on this character: Definitely! Wilson has no powers to speak of (aside from being able to grow a large beard), and very little defence against such abilities. Just be careful if your digging around in there, when his mental state grows stressed and weak he is prone to hallucinations, aggressive behaviour, blurred vision, and headaches.

Warnings/Other Information:
The Game Don't starve runs off of a food, sanity, and health meter system. The most important one to be mindful of in the RP world will be his sanity meter. Because excess stress and unexplainable scenarios can cause his mind to deteriorate. This means he might not react well to surprises, aggression, or spooky situations well. He can go from simple blurred vision and headaches to hallucinations and increased aggressive behavior if threatened!
